Ingredients

  • For 1-8" * 4" bread
  • 3 tbsp oil
  • 1 cup sugar
  • 1/2 cup peeled, grated apples
  • 4 lightly beaten egg whites
  • 1 1/2 cup flour
  • 1 1/2 tsp cinnamon
  • 3/4 tsp baking soda
  • 3/4 tsp baking powder
  • 1/3 cup chopped nuts, [ optional ]

Directions

Blend first 3 ingredients. Beat eggs into mixture. Place zucchini in separate bowl; fold beaten egg mixture into zucchini. Stir dry ingredients, add to zucchini mixture. Mix well. Pour batter into greased 8 * 4" loaf pan. Bake at 325 F. for approximately 1 hour or until tester comes out clean. Jacques Gervais
