Ingredients

  • 1 cup of butter, or margarine, softened
  • 2 cups of sugar
  • 4 eggs
  • 1/2cup buttermilk( or milk soured with l tsp of vinegar)
  • 1 tsp. baking soda
  • 3 1/2 c. flour
  • 1/2 lb. diced dates
  • 1 lb bag orange slice candy, chopped coarsely in pea size or a little larger chunks.
  • 1- 31/2can coconut(2 cups)
  • 2 c. chopped walnuts ( 1 cup is okay)
  • 1 cup orange juice
  • 2 cups of confectioner sugar

Directions

cream butter, and sugar. add eggs, 1 at a time, beating well. combine buttermild and soda, and add alternating with
21/2 cups of flour. TAKE REMAINING 1 CUP FLOUR and dredge orange slices, walnuts, dates, and coconut in separate bowl. Add batter to fruit mixture, and mix well. Pour into well greased 10" tube pan and bake @ 250 degrees for 2- 21/2 hours. Mix together the orange juice and confectioners sugar, and pour glaze over hot cake, and allow to cool for approximately 30 min. then remove from pan. Make a day ahead of serving. Freezes well. WE MAKE THIS IN 4 4"X71/2"BREAD TINS and bake for 1 hour and 15 mins at 325 degrees.It is a good substitute for fruitcake, and we often give it as christmas gifts. It is one of our favorites...we also keep it in the refrigerator, as the coolness seems to complement the flavor...Cakes should sit a day before serving. Enjoy!!
