Ingredients
- 1 1/2 cups(210 g) flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 cup(100 g) sugar
- 1/4 lb. (115 g) butter
- 1/2 cup (1 dL) milk
- 1 egg
- Chocolate Chip Cake:
- Add 1 cup(6 oz.) chocolate chips to the batter before pouring it into the pan.
Directions
Preheat oven to 400 degrees F.(205 C). Butter and lightly flour an 8-inch square cake pan. Mix the flour, baking powder, salt, and sugar together in a large bowl. Melt the butter in a small pan, remove from heat, and stir in the milk and the egg, beating well. Add to the flour mixture and blend.(If making the Chocolate Chip Cake, add the 1 cup of chocolate chips.) Pour into the pan and bake for about 25 minutes, until a toothpick comes out clean. Cool in the pan for 5 minutes before turning out onto a rack. Serve warm with Lemon Sauce or frost with Creamy Chocolate Frosting or
Sultana Nut Frosting.
Dutch Apple Cake: Spread the batter 3/4 inch thick in a 10x6x2-inch baking dish. Pare and core 5 tart apples, cut into wedges of eighths, and press them in uniform rows into the batter. Mix 1/2 cup sugar with 1/2 teaspoon cinnamon and 2 tablespoons raisins. Sprinkle evenly over the top. Bake as directed. Serve with heavy cream.
