Ingredients
- 2 eggs well beaten
- 1 cup veg oil
- 2 cups sugar
- 2 cups grated zuchini peel also 2 Tbl. grated carrot or orange peel
- 3 tesp vanilla & lemon flavoring
- 3 cups flour
- 1 tesp. salt
- 1/4 tesp. baking powder
- 3/4 tesp. nutmeg
- 3 tesp. cinnamon
- 1 tesp. baking soda
- 1 cup chopped walnuts optional.
Directions
Add eggs,oil,sugar,grated carrot, vanilla&lemon .mix well. Add dry ingredients,zuchini & nuts. I use the spray coating or grease & flour pans. I use the small tins, about 5 loaves or 2 regular size. Bake at 350 for 45-60 min. cool & remove, this bread freezes well, ENJOY!!!
makes 2 regular loaves or about 5 small tins
