Ingredients
- 9 prepared crepes
- 1/4 cup butter
- 1/2 cup sliced mushrooms
- 1/4 cup diced onion
- 2T chopped green pepper (optional)
- 3T flour
- 2t prepared mustard
- 1/2 t salt
- dash pepper
- 1 cup milk
- 1 cup ham
- 1 cup green peas (canned but I use frozen)
- 2 hard boiled eggs cut into 8ths (it's easier to chop into large dice)
Directions
Melt the butter in large skillet. Saute the mushrooms and onion until tender. Add the salt, pepper and flour. Stir until smooth. Lower heat. Stir in the milk gradually, stirring constantly until thickened and bubbly. Fold in ham, peas, and egg. Fill each crepe with 1/3 cup of the ham mixture. Fold in sides and place in a square baking dish. Top with the rest of the ham mixture ( I thin it a little.) Cover and bake at 350 degrees until bubbling and hot.
