Ingredients

  • 3 c. miniature saltine crackers (oyster)
  • 1 1/2 c. pecan halves
  • 3 egg whites
  • 1 c. granulated sugar
  • 1 tsp. vanilla extract

Directions

Preheat oven to 300. In large bowl, combine crackers & pecans. In a medium bowl, beat egg whites until stiff. Add sugar & vanilla, mixing well. Fold mixture into crackers & pecans, stirring to coat completely. Spread mixture on a well-buttered baking sheet. Bake 20 minutes, stirring after 10 minutes. Spread mix on waxed paper to cool completely. Break into pieces & store in airtight container. Makes about 10 cups of mix.
