I freeze these mini loaves and they are just as good as the day they are baked. In fact, this is better the second day. I buy the colored plastic wrap and wrap these breads and include in Christmas gifts. This also makes a good fall recipe to use if you contribute to bake sales.
Ingredients
- 2 1/2 cups sugar
- 1 eight oz. package cream cheese
- 1/2 cup butter or margarine
- 4 eggs
- 1 sixteen oz. can pumpkin
- 3 1/2 cups flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon baking powder
- 1/4 teaspoon cloves
- 1 cup chopped English Walnuts
Directions
Soften butter and cream cheese. Mix all the rest of the ingdredients into the softened mixture. Put in six mini bread pans. Bake at 350 degrees until toothpick inserted in center comes out clean.
