Note: Stove top stuffing works fine if you don't want to make homemade. If you cook eye of round without stuffing, just as a roast, cook at 20 minutes per pound of meat.

Ingredients

  • 2-3# eye of round
  • 1 cup of your favorite bread stuffing
  • soft butter
  • garlic powder
  • 1 can golden mushroom soup
  • 1/2 c. cooking sherry wine
  • 1/2 c. water
  • 1/2 t. black pepper

Directions

With a sharp knife cut down the length of the roast not cutting all the way through (butterfly)....in the center of the roast carefully fillet each side open....you should have a large, single piece of meat about 1/2 inch thick....spread a thin layer of butter over the entire meat and sprinkle with garlic powder and pat the stuffing on top. Carefully roll up the roast lengthwise and tie with string. Place in a roaster and place in a hot 450 degree oven for 10 minutes, or until browned....While meat is browning, mix soup, sherry, water and pepper. Pour soup mixture over browned meat, cover, reduce heat to 350 and bake for 2 1/2 hours....check once in a while and add a little more water if sauce becomes too thick....served with mashed potatoes.
