Ingredients

  • 1 lb. fresh spinach, torn
  • 4 slices bacon, diced
  • 1/4 c. sliced green onion
  • 1/2 c. sliced fresh mushrooms
  • 2 tsp. brown sugar
  • 1/8 tsp salt
  • 1 1/2 tbsp. vinegar
  • 1/8 tsp. dry mustard
  • Dash of paprika

Directions

Wash & dry spinach, place in large bowl and set aside. Cook bacon in medium skillet until crisp. Add onion & mushrooms; saute until tender. Stir in next 5 ingredients; cook until thoroughly heated, stirring constantly. Pour hot mixture over spinach, and toss lightly. Serve immediately. 6 servings.
