My dad makes it every holiday, no recipe really, it's very hard to make it taste bad.

Ingredients

  • 1 lb. sausage (regular, not hot, sage or anything fancy, just good breakfast sausage)
  • 1 stick butter
  • large onion, chopped
  • toasted bread cut into croutons (use a heavy bread like Pepperidge Farm Toasting White)
  • rubbed sage
  • salt and pepper
  • chicken or turkey broth (from simmering giblets)

Directions

Fry the sausage until no pink remains, drain and place in a large bowl, discard the sausage grease and wipe out the frying pan. Mix croutons into sausage, set mixture aside.

Melt butter in frying pan over medium low to medium heat, add chopped onions, sauti slowly until onion is soft, add sage and mix well. Pour onion mixture over sausage mixture, mix well, add broth until mixture is damp but not sopping. Salt and pepper to taste, mix well. Place in casserole dish.
Bake uncovered in a 350F oven until top is nicely browned and stuffing is heated through.

We add mushrooms (fresh, raw) sometimes, whole if small, quartered if large. Everything in the recipe is to taste and you can really add whatever you like to the basic ingredients; it's very difficult to go wrong with this.
