A pitcher of mimosas(a bottle of champagne mixed with orange juice) and a salad of fresh seasonal fruits are the perfect accompaniments to this very festive casserole.

Ingredients

  • 6 eggs
  • 1/2 cup milk
  • 1/2 lb ham sausage
  • 1 tsp. garlic powder
  • 1/2 tsp. cayenne pepper
  • 2 tsp. fines herbes
  • salt, pepper
  • 1 cup extra sharp cheddar cheese
  • 2 slices sandwich bread cut into cubes

Directions

Preheat oven to 350 degrees. Line the bottom of a souffle dish with cubes of sandwich bread. Fry the ham sausage and place it on top of the bread cubes. Beat eggs with milk and add garlic powder, cayenne pepper, fines herbes, salt and pepper to egg milk mixture. Pour this mixture over sausage and bread. Top with cheddar cheese. Bake for about 30 minutes, until golden and until a fork stuck into the center comes out dry.

This serves four people, or three very hungry people.
