Cooking for Miracles is a project of the staff of the Royal Bank of Canada in aid of the I.W.K.Childrens' Hospital, Halifax, Nova Scotia/Hospital Telethon.
Ingredients
- 2 cups chopped onion
- 3 cups chopped celery
- 3 tbsp. butter
- 1 tsp salt
- 1/4 tsp pepper
- 5 cups milk (or part cream)
- 3/4 cup flour
- 1/4 - 1/2 cup butter or margarine,
- 1 lb. velveeta cheese
- 10 oz. can lobster
- 3/4 lb. cooked shrimp
- 1 lb. cooked scallops
- 1/2 lb. crabmeat
Directions
Saute onions and celery in 3 Tbsp. butter. Add salt and pepper. Melt butter, stir in flour and add milk and heat almost to boiling. Add celery, onion mixture and cheese. Cook until cheese is melted and sauce is slightly thickened. Add seafood. Place in large casserole. Sprinkle with buttered bread crumbs.
