If you don't have a pastry bag, it's not difficult to free-form these cookies.

Ingredients

  • 3 eggs, separted
  • 5 tbsp. granulated sugar
  • 1/2 tsp orange juice concentrate
  • 1/2 cup all purpose flour
  • confectioners' sugar

Directions

Preheat oven to 350 F. Grease and flour cookie sheets.

Beat egg whites just until foamy. Add 2 tablespoons sugar, one at a time. Continue to beat until soft, shiny peaks form.

In another bowl, beat egg yolks with remaining 3 tbsp. sugar until thick and lemon-colored, about 5 minutes. Add orange juice concentrate.

Gently fold half the flour into the yolks. Fold some yolk mixture into the whites, then fold all egg white mixture into yolks. Fold in remaining flour.

Spoon mixture into pastry bag with 3/4 inch opening. Pipe fingers 4 inches long onto cookie sheet, 1 inch apart. Sift confectioners' sugar over fingers and bake 10 to 12 minutes until firm and slightly golden.

Transfer to wire racks and let cool. Store in airtight containers.
