Ingredients
- 2 1/4 cups SUGAR
- 1 CUP BROWN SUGAR
- 1 CUP HEAVY CREAM (35%)
- 7 OZS. PECANS HALVES
- 1/2 tS SALT
- 1/4 CUP BUTTER
Directions
Put in a heavy sauce pan sugars and cream.
Place on medium heat stir constantly until all crystals are dissolved.
Clip thermometer and cook up to 230F (110c).
Stir in pecans, butter (in thin slices) and salt.
Continue stiring 3 or 4 times as mixture cooks to 236F (113c)
about 4 or 5 minutes.
Beat a few minutes and put in a 8X8 Greased pan.
Allow to firm at room temperature.
Cut the desired size.
