• 7 lbs. pitted plums
  • 5 lbs sugar
  • 1 pint apple vinegar
  • 1/2 tsp. cloves
  • 1 tsp. cinnamon
  • 1 tsp. ground allspice


Put plums, sugar, and vinegar in large cooking vessel.Add spices; and cook until the juice gets thick, but not so long as the spices will make it too strong.It should have the consistency of marmalade.Some plums will thicken more quickly than others.Fill sterilized jars and process in boiling water bath for 10 minutes.
