Ingredients

  • 4 cucumbers,halved, seeded and cut crosswize in 1/2" slices
  • 1 T. coarse salt or 2 T. table salt
  • 1/2t. white vinegar
  • Dressing:
  • 3 hard boiled eggs
  • 1 t. prepared mustard
  • 1/3 c. sour cream
  • 1/4 t. vinegar
  • 1/4 t. sugar
  • 1/8 t. white pepper
  • fresh dill
  • lettuce leaves

Directions

Seperate yolks from whites. Slice whites into strips and stir into cucumbers.

Combine yolks with mustard, sour cream, vinegar, sugar and white pepper. Stir til smooth and pour over cucumbers. Arrange on lettuce and sprinkle with dill.

Serves 4 - 6
