Ingredients

  • 7 pounds pitted plums chopped
  • 5 pounds sugar
  • 1 pint apple vinegar
  • 1/2 teaspoon cloves
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground allspice

Directions

Put plums, sugar and vinegar in a large cooking vessel. Add spices; cook until the juice gets thick, but not too long as the spices will make it too strong. It should be about the consistency of marmalade. (some plums will have more pectin than others and will thicken more quickly.) Fill sterilized jarsand process in boiling water bath for about 10 min.
