Ingredients

  • 2 packages frozen okra(or 1 lb. fresh okra), cut crosswise
  • 2 pkgs. frozen lima beans
  • 2 green peppers, chopped
  • 4 medium tomatoes, sliced crosswise
  • 2 pkgs. frozen corn(or 8 ears of fresh corn, cut off cob)
  • 1 small bunch of celery, coarsely chopped
  • Bread crumbs
  • Butter

Directions

Partially cook lima beans in salted water and then add corn. Add green peppers, okra and celery and cook just until done. Drain.

Place a layer of the vegetable mixture(reserve part of okra for top layer) in a buttered and crumbed baking dish. Then add a layer of tomatoes. Season with salt and peppr, dot with butter and bread crumbs. Repeat until casserole is filled. On top place a layer of okra that has been dipped in bread crumbs and sauteed in a little butter. Cover with bread crumbs and dot with butter. Bake in a 300 degree F. oven for about 1 hour. It can be cooked in the morning and reheated slowly before serving. It's even better the second day.
