Ingredients

  • 1 pound black-eyed peas
  • 3 quarts water
  • 1/2 pound salt pork
  • 2 tablespoons onion(chopped)
  • 1 tablespoon jalepeno pepper(chopped)
  • 2 teaspoons sugar
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper

Directions

Wash peas thoroughly. In a large bowl or crock, cover peas with 1 quart water. Cover and soak several hours. When peas are ready to cook, lightly brown pork in large heavy pot. Add 2 quarts water to pot. Heat to boiling. Add remaining ingredients. Cover and simmer 1 hour or until peas are tender.
