Ingredients

  • 1 cup sugar
  • 3 eggs
  • 3 egg yolks
  • 1-1/2 teaspoons vanilla
  • 14 oz sweetened condensed milk
  • 14 oz whole milk

Directions

Carmalize sugar in very heavy pan until dark amber. Pour quickly into 9"" deep dish glass pie pan or individual ramekins and turn until sides are coated.

Refrigerate until cool and set. Only about 10 minutes.

Beat together remaining ingredients very well. Pour into prepared caramel lined pans.

Bake in ""bain Marie"", a shallow pan of water brought up to oven temperature of 350"", for 60-70 minutes. This timing is for a 9"" deep dish pan.
Refrigerate. Remove from pan to shallow rimmed serving plate by dipping baking pan very quickly into very hot water to begin melting caramel.
Sometimes the turned out flan is covered with fresh fruits such as kiwis. I prefer to serve it natural
