• 4 egg whites
  • 1 tablespoon skim milk
  • 3 drops yellow food coloring
  • 1 tablespoon diced onion
  • Salt and pepper to taste
  • 1/2 cup cooked rice OR leftover mashed potatoes
  • 3 slices cholesterol-free cheese, cubed
  • 1 green pepper and 1 sweet red pepper, chopped, optional
  • 1 tomato, chopped, optional


In a mixing bowl, combine egg whites, milk, food coloring, onion, salt and pepper with a fork. Coat a 9-inch baking dish with no-stick cooking spray. In center of dish, place rice or potaotes in a mound and flatten. Pour egg mixture over all and top with cheese. Add chopped green and red pepper and tomato, if desired. Bake at 350 degrees F. for about 15 minutes. Yield: 1-2 servings
