This might not be what you're looking for but it's great and a favorite of ours. I don't know quantity because I very seldom measure ingredients when I make this. I use most seasonings to taste. Enjoy !


  • fresh basil
  • Plum tomatoes (diced and seeded)(l2)
  • 2 bunches green onions (chopped w/ tops)
  • 2 cloves garlic, minced
  • olive oil
  • 1 qt. heavy cream
  • 1/4 c. vodka, and a splash more(that's the flame, but you don't have to light it)
  • 1 box mushrooms, sliced,


Saute onions and garlic in olive oil, then add mushrooms.
Add the chopped tomatoes and cook til most of the water evaporates. (it will be soft) Add the vodka and simmer about 15 min. more. Add cream and simmer on low until it thickens. Do not boil or will curdle. Serve over pasta and top with grated cheese & chopped basil. Can add strips of chicken or shrimp for variation. Season to taste
