Ingredients

  • Slow Cooker:LOW;6-8 hrs. High;3-4 hours
  • 2 medium onion, thinly sliced
  • 1 broiler/fryer chicken(2 1/2-3 lbs.), skinned and cut in pieces
  • 2 cloves garlic, minced
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 to 2 tsps. crushed oregano leaves
  • 1/2 tsp basil
  • 1 bay leaf
  • 1 can(16 oz.)tomatoes
  • 1 can(8 oz.)mushrooms OR 1 cup fresh mushrooms
  • 1/4 cup water OR dry white wine
  • Cooked spaghetti, linguine OR vermicelli

Directions

Place sliced onions in bottom of slow cooker. Add chicken, seasonings, tomatoes, sauce, mushrooms and water/wine. Cover and cook on low for 6-8 hours or on high for 3-4 hours. Serve chicken with sauce over hot buttered spaghetti, linguine or


vermicelli. Yield; 6 servings. Diabetic Exchanges: One serving equals 3 protein, 2 vegetable; Also, 180 calories, 745 mg sodium, 177 mg cholesterol, 10 gm carbohydrate, 26 gm protein, 4 gm fat.
