• 1 pkg. Extra Lean Ground Turkey Breast
  • 2 cups soft bread crumbs
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 3 eggs
  • 1/2 cup skim milk
  • 1 to 2 teaspoons dried basil
  • 4 large green, red or yellow bell peppers, halved, seeded
  • 1 can (14 1/2 oz.) Italian-style stewed tomatoes, chopped or pureed
  • 1/4 cup freshly grated Parmesan cheese
  • Fresh Parsley, if desired


Heat oven to 350 F. Spray 13x9-inch dish with no-stick cooking spray. In large bowl, combine ground turkey, bread crumbs, onion, garlic, salt, eggs, milk and basil; mix well. Spoon mixure into pepper halves.

Pour tomatoes into baking dish. Arrange peppers on top of tomatoes. Cover with foil. Cook 50 to 60 minutes more or until turkey is no longer pink in center and peppers are tender. Remove foil. Sprinkle with cheese. Cook 5 to 10 minutes more until cheese is melted. Sprinkle wiht fresh parsley, if desired.
