Ingredients

  • 75-90g butter
  • 1 cup water
  • 1 cup flour
  • 4 eggs

Directions

Bring to the boil the butter and water, whilst bubbling pour in flour at once and mix, take off heat, cool slightly, and add beaten eggs a little at a time. Put teaspoons of the mixture on a greased baking tray and put into a hot oven 210c for 10 minutes, then lower oven to moderate for about 15-20 minutes. Take out and make a slit on the puff, and take out from the inside the soft dough. Replace on oven tray and bake a further 10 minutes. Once cooled you can fill them with either cream or custard. If you wish to make a tree as you say, may some caramel, with 3/4 cup water and 3/4 cup sugar, sugar must be melted before it boils, Boil until sugar caramelizes. You then dip both ends in the caramel, so as the puffs stick to each other.
