Do not try to substitute bacon for the salt pork. It does not work.

Ingredients

  • 10 boiled potatoes, water reserved
  • 1 cup onions, chopped
  • 1 cup celery, chopped
  • 1 T butter or fat
  • 1/4 pound ground salt pork
  • 4 slices bread, crumbled
  • 2 beaten eggs
  • salt, pepper, and poultry seasoning to taste

Directions

Rice boiled potatoes. Saute onions and celery in butter or fat until partially cooked but not brown. Stir into potatoes with salt pork, bread, eggs, and seasoning. Stuff goose, truss, and roast, basting frequently with reserved potato water. Be sure to pour off excess fat as it accumulates.
