Ingredients

  • 1 cup syrup from Celebration Cherries(recipe follows)
  • 2 teaspoons cornstarch
  • 1 tablespoon water
  • 1 1/2 cups Celebration Cherries
  • 1/4 cup light rum or brandy
  • Vanilla ice cream
  • Celebration Cherries:
  • 2 pkgs.(20 oz. each) frozen unsweetened loose-pack pitted dark sweet cherries
  • 2 cups sugar
  • 1 bottle(4/5 quart)light rum or brandy
  • Quick Celebration Cherries:
  • 1 can(17 oz.)pitted dark sweet cherries in extra heavy syrup
  • 1/2 cup light rum

Directions

1. Heat syrup in chafing dish or saucepan just to simmering. Mix cornstarch and water; stir gradually into syrup. Cook and stir over medium heat until thickened; reduce heat. Simmer 2 minutes. Stir cherries into syrup.

2. Heat rum in small saucepan. Ignite and pour over cherries. Serve hot over ice cream.
Celebration Cherries: Makes 2 1/4 cups syrup, 2 1/2 cups cherries. Place cherries in large glass jar. Pour sugar over cherries; add rum and cover. Refrigerate, shaking occasionnally until sugar dissolves, at least 3 weeks. Leftover Celebration Cherries can be served as an after-dinner liqueur. Serve picks with the cherries. Good served cold over ice cream.

Quick Celebration Cherries: Drain Cherries, reserving 1/2 cup syrup. Mix reserved syrup and rum; stir in cherries and cover. Refrigerate 3 hours
