Ingredients

  • 3 cloves garlic
  • 4 chicken breasts, diced
  • 1 red pepper
  • 1 green pepper
  • 1 onion
  • 4 mushrooms, sliced
  • 1 can tomatoes
  • 1 tbsp. olive oil
  • 2 kiwi, sliced
  • 4 parsley leaves
  • 1/2 tsp. oregano
  • 1/4 tsp. hot red pepper
  • Dash of salt
  • Dash of dry mustard
  • Optional: Frozen artichoke hearts

Directions

Saute chicken in garlic and oil. Remove chicken when light brown. Place sliced red and green peppers and onions (optional artichokes) and saute. When soft put chicken back and saute mushrooms about 2 minutes. Pour tomatoes (crush if plum). Add seasonings and kiwi, let simmer about 1/2 hour. Make pasta of choice. Put sauce on top. Serve with Romano cheese.


Makes 4 servings.
