Ingredients

  • Cheese and Peanut Crackers
  • 1/2 C butter, softened
  • 2 C shredded cheddar cheese
  • 1/4 tsp cayenne pepper
  • 1/4 tsp salt
  • 1 C flour, all purpose
  • 1/2 C oven toasted rice cereal
  • 3/4 C finely chopped peanuts
  • CAJUN SPICED PEANUTS
  • 2 T butter
  • 3 C pecan halves
  • 1/2 C light brown sugar
  • 1 tsp paprika
  • 2 tsp powdered chili
  • 1 T ground cumin
  • 1/4 C cider vinegar
  • salt

Directions

CHEESE AND PEANUT CRACKERS

Cream butter, cheese, cayenne pepper and salt together in large mixing bowl.

Mix in flour,cereal and peanuts. Press the dough into a small loaf pan and freeze until firm. When firm, cut dough into 1/8" slices, Place on cookie sheet, bake in 325F oven 12-15 minutes or until golden.

Serve warm at room temperature, Makes 36

CAJON SPICED PEANUTS

Melt butter over medium heat in a large skillet, add the pecans and saute, lightly, about 3 minutes. Add the brown sugar and cook until caramelized. Stir in the paprika, chili powder and cumin. Add the vinegar and cook until all the liquid has evaporated.

Season with salt, spread on a cookie sheet and bake until crisp at 375F about 3-5 minutes.
