Ingredients

  • Makes 2 or 3 servings
  • 1 (10oz) pkg. frozen chopped spinach
  • Boiling salted water
  • 2 slices bacon, diced
  • 1/4 cup minced onion
  • 1 garlic clove, crushed or minced
  • 1 tablespoon flour
  • 1/4 cup milk, half-and-half or whipping cream
  • 1/4 teaspoon Worcestershire sauce
  • Pinch sugar
  • Salt to taste
  • 1 hard cooked egg, chopped, if desired

Directions

Cook frozen chopped spinach in boiling salted water according to package directions. Drain well in strainer or colander; set aside. Saute diced bacon in a medium saucepan until limp. Add onion and garlic. Saute until onion is tender. Blend in flour. Cook a few seconds. Mix in drained spinach and milk, half-and-half or whipping cream. Add Worcestershire sauce and sugar. Cook and stir until thickened. Add salt to taste. Garnish with chopped egg, if desired. Makes 2 or 3 servings.
