Ingredients

  • 1-frozen or homemade 10-inch unbaked pie shell
  • 1/2 cup unsalted butter or half butter and half margarine
  • 2-oz. unsweetened chocolate
  • 1-oz. semi-sweet chocolate
  • 3 eggs
  • 1 tablespoon instant coffee dissolved in 2 tablespoons sour cream
  • 1 1/3 cups granulated sugar
  • 3 tablespoons light Karo syrup
  • 1 teaspoon vanilla
  • crushed chocolate cookie crumbs

Directions

measure the butter and chocolate into the top of a double boiler and melt over hot[not boiling] water.Remove from heat and let cool.

With an electric mixer or food processor,beat together all remaining ingredients,except cookie crumbs.Blend well.Stir in melted butter-chocolate mixture. Pour into prepard pie shell.

Bake in lower third of a preheated 350 oven for 35 to 45 minutes, or until filling puffs up and forms a crisp deeply cracked crust and the pastry edges are golden brown. Cool on a wire rack. The filling will sink down as it cools, and the inner layer will set but remain softly chewy.Note the shorter baking time leaves the filling more creamy which some people prefer.Sprinkle crushed cookie crumbs on top of pie. Serve room temperature, can be topped with vanilla ice cream or whipped cream.


Makes 1 10-inch pie.
