A popular sweet from the Philippines.

Ingredients

  • (BOMBONES DE ARROZ)
  • 2 cups cooked rice
  • 2 large eggs, beaten until frothy
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon grated nutmeg
  • 6 tablespoons plain flour
  • 3 teaspoons baking powder
  • oil for deep frying
  • icing sugar for sprinkling

Directions

In a large bowl, mix rice, eggs, sugar, vanilla and nutmeg. Stir flour and baking powder together and stir into rice mixture until thoroughly combined. Heat oil in a deep frying pan and when moderately hot, drop mixture in spoonfuls into the oil and fry on medium heat until golden brown and nicely puffed, turning them to brown all over. Lift out with a slotted spoon and drain on absorbent paper. Sprinkle with icing sugar and serve warm.


Makes about 24.
