I lived in Louisville for a few years and this was always part of any Derby party..........
Ingredients
- Fresh, frozen or dried black eyed peas
- onion
- bacon
Directions
Cut up bacon into bite size pieces and saute...........cut up onion and add to bacon............
Add peas and cover with water........
Bring to a boil and then simmer over low heat for about an hour..........
