This method I've found keeps your meatloaf from drying out in the oven, and gives you a 1 dish complete meal. Hope you enjoy it, I have 5 sons and they love meatloaf night.
Ingredients
- 2 lb. ground beef
- 1 med. onion (half diced, half rings)
- 2 eggs (beaten)
- 1 Tbs. worchestershire sauce
- 1 tsp. soy sauce (optional)
- about 15-20 single saltines (crushed)
- salt and pepper
- seasoning salt
- Potatos, carrots, celery chuncks
- 2 small cans tomatoe sauce
- 1 lg can of cooked, peeled tomatoes
Directions
Mix together well ground beef, diced onion half, beaten eggs, worchestershire sauce, soy sauce if desired, crushed crackers, salt, pepper and seasoning salt. Form into a flat round (like you would a hamburger) that is about 2 1/2 - 3 inches thick. Place in large baking dish and surround with vegetable chuncks and onion rings. Fill dish with water about half way up meatloaf, salt and pepper on top. Bake covered loosely with foil for 35 - 45 minutes at 350F, until vegetables begin to get tender. Add tomatoes, and sauce continue baking uncovered until meatloaf is done in center and vegetables are tender. Total baking time about 1 hour - 1 hour 15 mins.
