Ingredients
- 6 eggs, separated
- 1/2 tsp. salt
- 2 tbsp. cocoa
- 1 c. sugar
- 2 c. Brazil nuts, finely ground
- 2 tbsp. unseasoned bread crumbs
- 1 pt. whipping cream
Directions
1. Preheat oven to 350 degrees.
2. In a small bowl combine the egg yolks, salt, cocoa and 1/2 cup sugar. Beat well.
3. Mix in the ground nuts and bread crumbs.
4. In a large bowl, beat the egg whites until slightly stiff. Gradually add 1/2 cup sugar, beating after each addition. Continue beating until egg whites are very stiff.
5. Gently fold the egg yolk mixture into the egg whites.
6. Pour batter into 2 lightly greased 9 inch, round cake pans and bake at 350 degrees for 35 minutes or until a toothpick inserted in the middle comes out clean.
7. Remove cakes from pans and cool on wire racks.
8. Beat whipping cream until stiff.
9. When cake layers are completely cool, place one layer on a cake plate and frost with whipped cream. Top with the second layer and cover top and sides with remaining whipped cream. Refrigerate until ready to serve.
