Ingredients
- 6 eggs
- 5 cups flour
- 1 tsp vanilla
- 1 tsp sugar
- 1 tbsp water (you might need to use a little more)
- 1 tsp baking powder
- 1 tbsp oil
- powdered sugar and/or honey
Directions
Whip the eggs until very foamy and frothy. Add the vanilla, sugar, water and oil and whip until creamy. Sift 5 cups of flour and add 1 tsp of baking powder. Add the eggs to the flour and mix well. The dough should look like a very good pasta dough. You may need to add a little more water, 1 tbsp at a time, to make the dough moist enough to knead and to stay together. Knead until very smooth and of a uniform color. Roll out strips about 4 inches wide and at least 20 inches long about 1/8" or less in thickness. I used my pasta machine.
With a curly cutter, such as a hand ravioli cutter, cut the long strip into 3/4" by 5" strips. Press the ends of two small strips together securely and then twist them around each other at least two times. Securely press the ends together. Heat the honey until thin and keep warm. Heat at least 4" of oil in a heavy Dutch oven or in a deep fryer to about 350 degrees. Gently drop the braids in the hot oil. They will immediately puff up and float on the hot oil. Immediately turn them over and remove after 10 seconds. These cook very quickly and will burn very fast. They should be just turning golden when they are removed from the hot oil. The should be almost white. Drain on paper toweling.
Remove from the toweling and place on a large cookie sheet or in a deep and large roasting pan. Drizzle the warm honey over all with a spoon or small ladle. You don't need to cover both sides or put the honey on thickly. These are very tender and will break under heavy honey. You can also sprinkle powdered sugar over the braids instead of honey. Use a fine mesh strainer and shake the powdered sugar on one side. Gently turn them over and sprinkle the other side.
You can also make other shapes such as 3 or 4 inch squares with a small slit in the center, triangle or bow ties (cut the dough into strips of 3/4" by 3" for bow ties and pinch in the middle).
