If all the green tomatoes have disappeared or turned red, substitute firm red tomatoes and decrease the sugar to 1 teaspoon and cooking time to 2 minutes per side. Serve with bacon and grits for a Southern-style breakfast.

Ingredients

  • 1/4 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 medium-size green tomatoes(1 lb.), sliced 1/2 inch thick
  • 2 tablespoons butter or margarine

Directions

1. Mix flour, sugar, salt and pepper on a piece of waxed paper.Coat tomato slices with flour mixture.

2. Melt 1 tablespoon butter in a large skillet over medium heat. Add tomatoes in a single layer. Cook 3 to 4 minutes per side until lightly browned and just barely tender. Remove to serving platter. Repeat with remaining butter and tomatoes.
