• 3 lbs. meat
  • 6 tbsps. chili powder
  • 1 tsp. oregano
  • 1 tsp. cummin
  • 1 tsp. salt
  • 1/8 tsp. cayenne
  • 2 large garlic minced
  • 1 tsp. tabasco
  • 1 large can tomatoes
  • 1 quart of water
  • 1/2 cup corn meal or grits
  • 2 tbsps. oil


Brown meat, add seasonings with tomatoes and water. Heat to a boil. Simmer (covered) for 1 1/2 hours. Skim off fat, stir in corn meal and simmer uncovered for 30 minutes, stiring occasionally. You may vary the spices as desired, and use whatever type of meat you desire. I buy round steak and chop it up into small bits., and combine this with lean hamburger. Also ground pork or venison may be used. If you like you may also add a can of kidney beans.
