Ingredients
- 2 Cups Buttermilk
- 2 Cups Flour
- 3 Eggs
- 1 Tsp. Baking Powder
- 1/2 Tsp. Salt
- 1 Tsp. Baking Soda
- 2 Tsp. Sugar
- Unsalted Butter
- Abliskiver Pan - a must
Directions
Solvang is a wonderful Danish community in California near Santa Barbara.
Separate eggs. Beat egg yolks adding buttermilk and sifted ingredients (flour,baking powder,baking soda,salt,sugar). Beat egg whites and fold gently into batter.
Heat abliskiver pan with a 1/4 tsp of unsalted butter in each cup. Fill each cup 2/3 full of batter. Gradually work ball around until brown on all sides . . . . . takes patience. Knitting needles work well for this job. If turned to fast, the batter does not cook all the way thru.
In Solvang these are served with a wonderful berry sauce. Any jam, syrup or powdered sugar will compliment them. Good luck, they are worth the work.
