Ingredients
- These were sent to the boys in the service during World War II.
- "Soft, plump cookie-pillows that, thanks to the dates, stay moist for days--perfect for shipping overseas."
- 8 tablespoons butter or margarine
- 1 cup packed brown sugar
- 2 eggs
- 1/2 vanilla extract
- 1/2 cup nuts
- 1 small apple
- 3/4 cup pitted dates (about 18)
- 1/2 cup quick oatmeal
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1 3/4 cups enriched all-purpose flour
Directions
Preheat oven to 425 degrees F.
Cream butter; add sugar. Add eggs and vanilla and beat well.
Grind nuts, apple, and dates in food chopper (or chop with 6 to 10 short pulses in a food processor), and add to first mixture.
Mix oatmeal, soda, baking powder, and cinnamon with flour. Add to fruit and butter mixture; beat well. Drop on oiled cookie sheet by heaping teaspoon. Bake 10-12 minutes.
Makes about 3 dozen.
