Ingredients

  • These were sent to the boys in the service during World War II.
  • "Soft, plump cookie-pillows that, thanks to the dates, stay moist for days--perfect for shipping overseas."
  • 8 tablespoons butter or margarine
  • 1 cup packed brown sugar
  • 2 eggs
  • 1/2 vanilla extract
  • 1/2 cup nuts
  • 1 small apple
  • 3/4 cup pitted dates (about 18)
  • 1/2 cup quick oatmeal
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1 3/4 cups enriched all-purpose flour

Directions

Preheat oven to 425 degrees F.

Cream butter; add sugar. Add eggs and vanilla and beat well.

Grind nuts, apple, and dates in food chopper (or chop with 6 to 10 short pulses in a food processor), and add to first mixture.

Mix oatmeal, soda, baking powder, and cinnamon with flour. Add to fruit and butter mixture; beat well. Drop on oiled cookie sheet by heaping teaspoon. Bake 10-12 minutes.


Makes about 3 dozen.
