I have made the same thing in muffin tins with the oil or drippings and it works great and makes individual servings. These are also known as popovers when made in the muffin pans. You can make the batter ahead and it will keep covered on the counter for an hour.

Ingredients

  • 1 cup minus 1 T. flour
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup milk
  • 1/4 cup beef drippings or 4 T. warm melted unsalted butter

Directions

Whisk together flour and salt. In a large bowl whisk together the eggs and milk. Add the flour mixture and beat until well blended. Heat a 13/9 baking pan, preferably glass or ceramic for 10 minutes and add the beef drippings or butter. Pour in the batter all at once. Bake for 15 minutes at 450 degrees then reduce the heat to 350 and bake until puffy and deep golden brown, 15 or 20 minutes more. Cut into squares and serve immediately. It deflates quickly.
