Chocolate Zucchini Bread Recipe

  American Bread

3 eggs
1 cup vegetable oil
2 tsps. salt
3 cups zucchini, grated
2 cups granulated sugar
1 tsp. cinnamon
2 tsps. baking soda
1/4 tsp. baking powder
2 tsps. vanilla
2 1/3 cups flour
1/2 cup unsweetened cocoa
1/2 cup nuts, optional

Combine dry ingredients, including nuts. In a separate bowl, mix together eggs, oil and zucchini, then add to dry ingredients; mix together. Pour into 2 mid-sized greased loaf pans. Bake at 350 degrees for 45 minutes.
Makes 1 loaf.
