  American Jellies and Jams

4 cups plums, chopped (don"t peel)
1/4 cup lemon juice
7 cups sugar
1 pouch certo

Combine the plums., lemon juice, and sugar in a large heavy pot. Stirring often, bring to a hard boil (on that cannot be stirred down), and boil for two minutes. Remove from heat and add certo. Skim if necessary.

As for the rhubarb, I use half and half with other fruit. I freeze the rhubarb (which also softens the fibers) and combine with whatever seasonal fruit. Try it with raspberries or strawberries, it's lovely!
