Title: Italian Minestrone Bean Soup
Type: Soup
Description: I am looking fora hearty Minestrone Soup my gramma used to make with the chief ingredients being Pink Beans and Rigatoni Pasta. She would make this delicious thick soup with the stock left after cooking corned beef & cabbage. She would put the leftover vegies from the c/beef pot into the osterizer with 1/2 of the cooked beans making it a very thick base, then adding rigatoni she cooked in a different pot to everything. I remember her throwing a handful of fresh spinach or chard (chpd. fresh from her garden) as well. She would grate Parmesan cheese over the top and with this a slice(OR 2!!)of buttered fresh sourdough french bread, and sometimes a shot glass of my grandfather's jug wine (CHIANTI OF COURSE!!!)stirred into the hot soup, this taste of early memories was a automatic lullaby for a cold winters night sleep. I hope there is a little Italian nona out there that may have this or a similar recipe so I may enjoy this special soup again, NOW WITH MY CHILDREN!! THANK YOU SO VERY MUCH FOR SHARING..........
