any main vegan dish that is hi in protein, low in carbohydrates which usually means tofu as the main ingredient, but i am looking for any ideas. i am a physician, and obesity is a major problem. i would like to have a resource for my patients who are vegans to learn how to eat, enjoy and avoid carbohydrates. low fat is not necessarily important since good fats (olive oil, peanut oil, etc) are actually good for your heart and tofu tastes great sauteed in olive oil. please let me know! thank you
