Ingredients

  • 1 8-10lb turkey
  • 1 medium onion
  • 2 bay leaves
  • 1/2 c white wine
  • Super Smoking Sauce

Directions

Rinse turkey, pat dry and rub liberally with oil. Place onion, bay leaves and wine in water pan with hot water. Place water pan on smoker and turkey on smoker grid. Place dome on smoker and do not remove until halfway through cooking time. then remove dome and liberally paint with super smoking Sauce. Replace dome and continue smoking. when turkey is done liberally point again and allow to smoke for 15 minutes more.

Super smoking Sauce1 lb corn oil margarine
2/3 c sherry or red wine
2 T Worcesteshire sauce
2 T soy sauce
2 garlic cloves, finely chopped
1/2 c parsley
2 t salt
1 c water

Combine all ingredients in heavy saucepan and bring to boil. Lower heat and simmer for 30 minutes. Paint on meat surfaces and at end of smoking. Keeps indefininely refrigerated.

For charcoal smoker use 10 lbs charcoal, 5 qts hot water, 3 wood sticks and smoke 4-6 hours.
