Ingredients:

  • .25# fresh ginger, peel, slice 1/4"" disks
  • 3T sichuan peppercorns
  • 1 t red pepper flakes
  • 3 c peanut oil

Directions:
In deep pot, bring all ingredients to 220 - 250 degrees for 20 minutes; strain through cheesecloth into a clean dry bottle (better let it cool a little first)
