Ingredients

  • CARPETBAG STEAK
  • 2 lb. fillet of beef in one piece
  • 1 clove garlic
  • salt and pepper
  • 1 C soft breadcrumbs
  • 1 - 1/2 Dz. oysters
  • 3 T dry red wine

Directions

Cut a pocket along the center of the fillet. Rub meat with cut clove of garlic. Mix breadcrumbs with oysters. Add salt and pepper to taste. Place seasoning into fillet and secure with a skewer or cotton. Wrap in aluminum foil and bake in a hot oven 400 degree for 1 - 1 1/4 hours, or until meat has reached the desired doneness.

Remove steak and make a gravy, adding red wine to taste and extra oysters if desired.

Slice steak and serve immediately accompanied by new potatoes, carrot rings and butter beans.
