Applesauce Cake Recipe

Ingredients:

  • (Two 8-inch round layers or one 9x13-in. cake)
  • 1/4 lb. (115 g) butter, OR 1/2 cup(1 dL)shortening
  • 1 1/2 cups (300 g)sugar
  • 1 cup(1/4 L)applesauce
  • 2 eggs
  • 2 cups(280 g)flour
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1/2 cup(1 dL)raisins
  • 1/2 cup(1 dL)chopped walnuts
  • Cream Cheese Frosting:
  • 4 tablespoons cream cheese, softened
  • 1 1/2 cups(3 1/2 dL)confectioners' sugar
  • 1 egg white, slightly beaten
  • 1/2 teaspoon vanilla
  • 1/8 teaspoon salt

Directions:
Cake: Preheat oven to 350 degrees F.(180 C). Butter and lightly flour two 8-inch round cake pans or one 9x13-inch cake pan. Cream the butter or shortening, add the sugar gradually, and beat well. Add the applesauce and blend. Beat in the eggs and mix thoroughly. Mix together the flour, baking soda, salt, cinnamon, and nutmeg, add to the first mixture, and beat just until mixed. Stir in the raisnins and nuts. Spread in the pans or pan and bake, 25-30 minutes for the layers, 35-40 minutes for the rectangle. Test to see if a toothpick comes out clean. Cool in the pans for 5 minutes before turning out onto racks. Spread with Cream Cheese Frosting before serving, if you wish.
Frosting: Beat all the ingredients together until light and of spreading consistency. You will have enough to fill and frost an 8-inch two-layer cake.



This cake keeps well and will stay fresh for picnics or trips. Add a teaspoon pf powdered ginger if you want it very spicy.
