It is soooo... Important to look after the safety of people around this event. Hot grease can cause severe burns. Please always cook it away from guests and especially children.

Ingredients

  • 1 to 2 gallons peanut oil
  • 12-14 lb. Hen turkey
  • Stainless steel wire

Directions

Pour peanut oil no more than 2/3 of the height of the pot. Pre-heat oil to medium heat in tall, large pot over propane gas-fired burner.

Tightly wire legs of turkey and leave enough wire on each side to safely remove turkey when cooked. Lower turkey slowly into heated oil, holding onto wire, leaving excess wire hanging over sides of pot.

Cook 5 min per pound, plus 5 minutes. With potholders, carefully lift turkey (by the wire) out of oil and drain on brown paper bag spread on platter. Remove paper bag before serving.
